How do I properly upgrade to a newer DocuSeal docker version?

I've been removing the previous docker container and then running

docker run --name docuseal -d \
        -p 3000:3000 \
        -v /path/to/external/data:/data \
        docuseal/docuseal:[newer-version]

but it feels like something related to pdf downloading breaks every time I update. For example, when upgrading to 1.7.5 from 1.7.4, the downloaded PDFs are all empty with 0kb in size.
