Ceviche

Ingredients

  • 6 oz salmon, cubed -- 2-3 lemons, juiced
  • 2 fresh green chiles, finely chopped
  • 1 small onion, finely chopped
  • 1/2 avocado
  • 2 tomatoes, skinned/seeded/chopped
  • 1/2 cup olive oil
  • coriander leaves, chopped
  • salt and pepper

Instructions

  • Coat salmon cubes in a bowl of lemon juice, leave in fridge for 5 hours
  • Remove, drain lemon juice, add rest of ingredients. Refrigerate prior to serving.
