- 6 oz salmon, cubed -- 2-3 lemons, juiced
- 2 fresh green chiles, finely chopped
- 1 small onion, finely chopped
- 1/2 avocado
- 2 tomatoes, skinned/seeded/chopped
- 1/2 cup olive oil
- coriander leaves, chopped
- salt and pepper
- Coat salmon cubes in a bowl of lemon juice, leave in fridge for 5 hours
- Remove, drain lemon juice, add rest of ingredients. Refrigerate prior to serving.
