Does ohook only activate Office 2016, or do I just need to install a different version's C2R?

After using MAS to activate Office permanently, I saw that it was Office 2016. This struck me as odd, since this is a new computer. So, does MAS only provide activation with a 2016 license? Or is Office 2016 just what I must have already had downloaded (and if I want a different version, I should just download a different C2R, e.g. for o365)?

If MAS does activate other versions like 2021 and o365 just fine, do I need to uninstall my current 2016 office C2R suite before installing a new one?

Yes, you had 2016 that is why 2016 was activated. Ohook can activate 2013/16/19/21/O365.

I would assume this means it's Office 2016, right? If this is actually O365, is there not at least a newer version, like "Office21O365ProP1usR" or something?

Office 16(.0) is the version number of Office. Office 2016 and later is Office 16, Office 2013 is Office 15, Office 2010 is Office 14.

Good lord, really? So Office 2021 and Office 2019 are both also considered "Office 16"? That's awful.

run ohook and check Office activation status, the number 16 in that string just refers to version number. O365 is also there which refers to Office 365.
