Perfect blue berry muffine recipe. The batter is thicker to hold the blue berries suspended so they don't all sink to the bottom. The top has strusle that gives it a nice crunch.
- 1 1/2 cup flour
- 3/4 cup sugar
- 1/2 tsp salt
- 2 tsp baking soda
- 1 egg
- 1/3 cup milk
- 1 tsp vanilla
- 1/3 cup oil
- 1 cup blue berries
- 1/2 cup sugar
- 1/3 cup flour
- 1/4 cup butter
- 1 1/2 tsp cinamon
- preheat oven to 325 degrees fahrenheit
- Mix together flour, sugar, salt, baking soda for the muffin batter.
- Make a well in the dry ingredients, add all the wet ingredients and mix together.
- Line a muffin tin
- Mix all the ingredients for the strusel topping in another bowl.
- Pour the muffin batter into the muffin tin
- Sprinkle the strusel on top of each muffin
- Bake for 25 min.
