Mini Coffee Cake

Ingredients

Cake Batter

  • 1 eggs
  • ½ Cups sugar
  • ½ Teaspoons vanilla
  • ¼ Cups butter
  • 6 Tbsp sour cream
  • ¾ cup flour
  • ¾ tsp baking powder
  • ¼ Tbsp baking soda

Strussel

  • 1 Tbsp sugar
  • 2 flour
  • ½ tsp cinnamon
  • 1 Tbsp butter

Cream Cheese Filling

  • ½ block cream cheese
  • ¼ cup powder sugar

Icing

  • 2 Tbsp powder sugar
  • 1 tsp milk

Instructions

  1. For the batter, Cream the butter and sugar together
  2. Add egg, vanilla and sour cream
  3. In another bowl mix dry ingredients
  4. Add dry ingredients to wet slowly while you mix until smooth
  5. To make the strussel, Pinch butter with dry ingredients until combined into a grainy consistency, alternatively use a food processor.
  6. Mix cream cheese and powder sugar together until smooth
  7. In a greased ramakin pour half the batter
  8. Sprinkle some of the strussel over the batter
  9. Spread cream cheese over the strussel
  10. Pour the rest of the batter over the cream cheese
  11. Sprinkle the rest of the strussel on top
  12. Bake for 20 min at 350F
  13. Make the icing by combining the sugar and milk
  14. After the cake is cool pour the icing over it
