Hey guys,
I'm not part of the team anymore, but to get this sort of thing started with Unity mesh colliders that were generated from Mapbox building geometry (these are colliders that match the buildings exactly).
For the sake of simplification we approximated these colliders with boxes in a brute force manner: by raycasting downward a bunch of times across the playable area, and placing a box of predefined width and length where the ray hit one of the buildings.
